I do not want Double to integrate with my inbox. I'd like to have the practice email under Branding settings only, with 0 access under Inbox.

Disable the Inbox tab under Practice Settings > Manage Users > Keeper Emails. Check the "Hide Inbox tab for entire practice" box to remove access for all users.
